I wrote a post today where I said sausage is better than bacon, and I got YELLED AT. It was great.
Both have their place. Bacon is a much more common choice for me, mostly because even bad bacon is good. So at any given bodega I’m going with bacon. Bacon also has more uses than sausage as an ingredient in other dishes. Sausage, otoh, has a much bigger upside. Nothing tops the splash of wet, fatty deliciousness that comes as your teeth bite through the casing with a snap. And while it may not have as many uses as bacon, sausages indispensability when making sauce or gravy has to be considered.
