OK, how great is this? Danish Holsteins raised in saltwater marshes. Pre-salted beef raised in a gentle, wet and warm marsh. Ideal conditions for a flavorful, well marbled piece of meat. Need to find a source for this.

Yesterday a bus crashed into our camera truck. Said truck was parked in the curb lane. For three days. Legally permitted to be there. Bus hit a 55’ truck set up on chocks and with the emergency brake on hard enough to move it ten feet forward. Uphill. Shook the shit out of the loader who was working in the truck at the time.

It was completely delicious. The mouse was really more like minced rabbit in a bit of cream. It was wrapped in a very tender and moist piece of rabbit loin, and the crispy bacon formed a sort of basket around it which held it all together. One of the better things I have eaten in quite a while.
